Sunday is the only Funday

Sunday Funday is all about the champagne for me. I love a bubbly brunch that leads into a chill and fun afternoon spent with family and friends. Sometimes it's at home and other times it's out and about. This week I'm chilling at home, finishing up on work and nursing my hangover so I decided to share my version of a champagne cocktail that is both easy to make and delicious to enjoy. It's also super easy and something that you can prep the night before (so if you wake up a little hungover...).



The Valencia

Champagne Cocktail



Ingredients

Brut Champagne or Cava

1 1/2 oz Gin

1 oz Orange Juice

Garnish: Orange Twist



Recipe: To prep this, I would suggest buying orange juice or squeezing your juice the night before next to your chilling bottle of bubbles. You can also put your coupe glasses in the freezer. When you are ready, in a cocktail shaker with ice, pour gin and orange juice. Give it it a nice shake and pour into your coupe glass. Then top with the preferred amount of bubbles (usually starting at least one and half ounces). Garnish with an orange twist and you have an elevated mimosa. It looks fancy, cures the hangover, and will look perfect on whatever brunch table you have (be that greasy fast food or fancy delectables). This cocktail is so good because it is easy but looks more than that. Plus it's refreshing.



PRO TIP: This is an easy cocktail to make as a mock-tail. Instead of Champagne just use sparkling water. For the gin replacement, I might add in a little lime or lemon to give it a tartness but you can also skip that entirely.
